As The Golden Carrot began to take shape, Nicole Corriher imagined a space full of whimsy and warmthâlike something out of a Beatrix Potter story. The original Hoboken shop, with its 100-year-old brick walls and floral-filled charm, felt like stepping into a tale of its own. Naturally, a sweet, golden bunny named Herb became our beloved mascot.
